6 TBL brown or yellow mustard
4 tsp honey
4 chicken breasts (boneless/skinless is the best)
4 whole wheat buns (I used the sprouted grain buns)
Lettuce leaves
1 Mango, sliced
Salt and pepper to taste
Preheat oven to 350 degrees.
Mix mustard and honey together, add salt and pepper to taste.
Place the chicken breasts in a lightly oiled baking dish. Spread the majority of the mustard/honey mixture over the chicken breasts. Roast the chicken in the oven until fully cooked, usually takes 15-20 minutes.
Toast the buns and spread the rest of the mustard/honey mixture on the buns. Place a leaf of lettuce and a mango slice on the bun. Then add a piece of chicken breast. Enjoy!
