1/2 pound lean ground turkey
1/2 cup onions, chopped
1/4 cup green peppers, chopped
3 cups Hunt's tomato juice
1 1/2 cup macaroni
1/4 tsp garlic powder
1/4 tsp pepper
1/4 tsp chili powder
Add macaroni to boiling water and cook for 7 minutes. Cook the first 3 ingredients in a saute pan until meat is brown and vegetables are tender.
Drain off the fat. Add tomato juice, macaroni, and spices. Simmer until liquid is almost absorbed.

Tres Leches!
1 1/2 cups flour
1 tsp baking powder
1/2 cup butter
1 cup sugar
5 eggs
1/2 tsp vanilla
2 cups whole milk
1 can (14 oz) sweetened condensed milk
1 can (12 oz) can evaporated milk
1 1/2 cups heavy whipping cream
1 cup sugar
1 tsp vanilla extract
Preheat oven 350 degrees. Grease and flour a 9x13 inch baking pan.
Stir flour and baking powder together and set aside.
Cream butter, and 1 cup sugar together until fluffy. Add eggs and 1/2 tsp vanilla; beat well.
Add the flour mixture to the butter mixture 2 TBL at a time; mix well. Pour batter into prepared pan.
Bake for 30 minutes. Pierce cake several times with a fork.
Combine the whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
Whip the whipping cream, the remaining 1 cup of sugar, and the remaining 1 tsp vanilla until thick. Spread over the top of the cake. Make sure you keep this cake refrigerated.

2 TBL olive oil
2 TBL minced garlic
1 tsp ground cumin
1 can black beans, rinsed and drained
1 1/3 cups tomato juice
1 1/2 tsp salt
1 tsp chili powder
2 TBL fresh cilantro
In a nonstick skillet, cook garlic and cumin in olive oil over medium heat until you can smell it. Add beans, tomato juice, and salt. Continually stir until heated through. Just before serving stir in the cilantro. Add cumin and chili powder.
You can add corn if you want.

In a sauce pan combine rice, butter, garlic, 1 tsp lime juice, chicken broth and water. Bring to boil. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix as you fluff the rice.

Mix all ingredients but the jelly together.
Chill in the fridge for 15 minutes.
Roll the dough in small balls. Place on an ungreased cookie sheet and press a thumb print into the tops of all the cookies.
Add jelly to the center of each cookie.
Bake for 10-15 minutes.

White Chocolate Chip Macadamia Nut Cookies!

1 cup macadamia nuts

Olive and Tomato Stuffed Chicken!

4 pieces of chicken, thawed1 tomato chopped
1/2 a can of olives chopped
2 TBL Parmesan cheese
1/4 tsp Italian seasoning
1/8 tsp pepper
olive oil cooking spray
1 egg white, beaten
1 TBL water
1/3 cup cereal crumbs
1/2 tsp Italian seasonings
1 can spaghetti sauce
1 box pasta
Preheat oven to 400 degrees.
Flatten the thawed chicken.
Mix the chopped olives, tomatoes, Parmesan cheese, 1/4 tsp Italian seasoning, and pepper together in a bowl.
Place the tomato mixture in the center of each piece of chicken. Roll the chicken over and secure with a toothpick.
Spray an 8x8 dish pan with non stick spray.
In a bowl combine the egg white and water. Beat well.
In another bowl combine cereal crumbs and 1/2 tsp herbs.
Dip each piece of chicken in the egg mixture then in the crumbs. Place the chicken in the pan.
Bake in the oven for 20-25 minutes.
Slice the chicken if you want.
Serve with spaghetti and sauce.
