1 loaf artisan bread (Can find at Albertson's or Smith's)
Red roasted pepper humus
1 Cucumber
1 Tomato
Lettuce
1 TBL minced garlic
1 TBL olive oil
2 red peppers
1 container feta cheese
Salt and pepper to taste
Cut red peppers into thin strips. In a stir fry pan, saute the red peppers with garlic, olive oil and salt and pepper.
Place two pieces of bread on a plate. Spread the humus on both sides of bread. Add cucumbers, tomatoes, red peppers and lettuce. Then sprinkle feta cheese on top. Add salt and pepper to taste.
For those meat lovers: Boil 2 pieces of chicken in water until cooked completely. Shred chicken into thin strips (best done with fingers) Add Italian dressing and let marinate. Add this chicken to your sandwich if desired.
