Super Moist Snickerdoodles!


1 cup butter
1 1/2 cups sugar
2 large eggs
2 3/4 cups flour
6 tsp lemon juice
1 tsp baking soda
1/4 tsp salt
3 TBL sugar
3 tsp cinnamon

Heat oven to 350 degrees.

Mix butter, sugar and eggs completely in a bowl. Mix until light and fluffy.

In another bowl, combine flour, lemon juice, baking soda and salt. Mix.

Add the dry ingredients to the wet ingredients a little at a time until completely mixed. (I sometimes have to add up to 1/4 of a cup more of flour)

Chill dough and ungreased cookie sheets in the fridge for 15 minutes.

In a small bowl mix the rest of the sugar and cinnamon together.

Make 1 inch balls with the dough and roll in the cinnamon/ sugar mixture.

Place on chilled, ungreased cookie sheet. Bake for 10 minutes.

Remove immediately.

Note* These do not spread out very far when baking so you can place them close together!
