2 TBL onion flakes
1 yellow zucchini
1 green zucchini
1/2 tsp cumin
1/2 tsp curry (I left this out and it was still good!)
1-2 tsp chili powder
1 can black beans
2-4 TBL salsa (just enough to coat everything in it)
olive oil
In a saute pan add olive oil and warm on medium heat.
Cut zucchini in into circles. Then cut the circles in to fourths so that you have triangle shaped zucchini.
Add zucchini to the olive oil, make sure you try one first the oil is ready if you can hear a sizzling sound. Cook zucchini until lightly browned- this is quick, less than 5 minutes. Anything longer and you will have soggy zucchini which is not good.
Add the black beans and spices. Turn heat to low and allow to warm for a couple of minutes. Then add the salsa.
This is great of the meat replacement in just about anything!
Over rice or pasta.
In tacos or burritos.
In enchiladas.
Or quesadillas.
We use it in a quesadilla. We took a tortilla and added the mixture to half of the tortilla. Topped the mixture with cheese and folded the tortilla over. Then we browned both sides in a non stick pan. Top with lettuce, olives, tomatoes and whatever other toppings you would like!
