2 TBL olive oil
1 TBL minced garlic
1 eggplant-sliced in circles
1 TBL Italian seasoning
1 tomato- thinly sliced
cheese
Salt and pepper-optional
Preheat oven to 425 degrees.
Mix olive oil and garlic together in a bowl. Coat the fronts and backs of the eggplant with this mixture.
Place eggplant rounds on a greased cookie sheet.
Bake for 15 minutes. Turn them and bake for an additional 5 minutes.
Turn temperature down to 350 degrees.
In an 8X8 glass pan layer half of the eggplant on the bottom. Sprinkle with some Italian seasoning and cheese. Then layer the tomato slices. Add more seasoning and cheese. Top with the rest of the eggplant and more cheese. Salt and pepper top for taste.
Cover with aluminum foil and bake for 20 minutes. Uncover and bake for 5 more minutes.
Serve with rice or pasta.
